Forms of preparation
Way 1: put the bag in the bain-marie for 15 minutes.
Method 2: Pour the contents of the bag into a saucepan and heat over low heat for 3-5 minutes.
As a side dish for our Maniñas of lamb with chickpeas we recommend a simple fresh green salad.
The legendary “Puesto Piloto” restaurant in Vigo, now gone, had a particularly delicious dish on its menu: veal leg stewed with chickpeas. Collecting that proposal and using the material provided by our farm in O Rexo, we present these lamb shanks with chickpeas. The dish was prepared in the kitchens of the Alarican restaurant Pepiño de Allariz with the care of traditional cuisine: with patience, honesty and good products.
In these times, and always, it is good to collect that saying that “even the tail is good” as a symbol of utilization and appreciation. In our O Rexo lamb everything is first quality lamb. Also the legs.
